Vegetable juice is sometimes recommended as a dietary aid for anemia, primarily due to its content of certain nutrients—especially iron, folate, and vitamin C—that are important in red blood cell production. Scientific evidence for the use of vegetable juice per se (as opposed to the individual nutrients it contains) to treat anemia is limited and indirect. Certain vegetables, such as spinach, beets, and kale, are rich in non-heme iron and folate. Vitamin C, present in many vegetables like bell peppers or tomatoes, can enhance the absorption of non-heme iron when consumed together. Some clinical and observational studies suggest that diets rich in these vegetables may help improve iron status, particularly in populations at risk of deficiencies. However, vegetable juice typically contains less iron compared to animal sources and, unless specifically formulated or fortified, may not provide sufficient amounts to treat moderate or severe anemia on its own.
