Vitamin C, including the fat-soluble form ascorbyl palmitate, is scientifically recognized for its role in enhancing the absorption of non-heme iron (the form of iron present in plant-based foods) from the gastrointestinal tract. The mechanism involves the reduction of ferric iron (Fe3+) to the more absorbable ferrous form (Fe2+) and forming soluble iron-ascorbate complexes, which facilitate uptake in the intestine. This enhancement of iron absorption is particularly relevant in populations at risk for iron deficiency anemia, such as vegetarians, pregnant women, and children. Multiple clinical trials and meta-analyses have demonstrated that vitamin C co-administered with oral iron supplements or iron-rich meals increases iron absorption and improves hematologic parameters, such as hemoglobin and ferritin levels, in individuals with iron deficiency anemia. However, most of this evidence pertains to ascorbic acid (the water-soluble form), not specifically ascorbyl palmitate. Ascorbyl palmitate is metabolized in the body to ascorbic acid, and thus theoretically may provide similar benefits, but direct clinical studies with ascorbyl palmitate for anemia are limited. Nonetheless, the general scientific consensus regarding vitamin C’s role in supporting iron absorption—and thus treating or preventing iron deficiency anemia—is strong. It is commonly recommended in clinical guidelines to pair vitamin C with oral iron therapy, though ascorbic acid is the preferred and studied form.
