Polyunsaturated fats (PUFAs), especially omega-3 and omega-6 fatty acids, have substantial scientific evidence supporting their role in arterial and cardiovascular health. Numerous clinical and epidemiological studies have demonstrated that replacing saturated fats with polyunsaturated fats can lower LDL ("bad") cholesterol levels, which is a major risk factor for atherosclerosis and coronary artery disease. Major health organizations such as the American Heart Association recommend the inclusion of polyunsaturated fats in the diet as part of strategies to reduce cardiovascular risk.
Specifically, omega-3 fatty acids (found in fatty fish, flaxseed, and walnuts) have been shown to reduce triglyceride levels, lower blood pressure modestly, reduce inflammation, and decrease the risk of arrhythmias. Omega-6 fatty acids (found in vegetable oils) can also help decrease LDL cholesterol when used in place of saturated fat. A 2017 meta-analysis in the journal Circulation concluded that PUFA consumption is associated with a reduced risk of coronary heart disease events and deaths.
However, the benefits of PUFAs are most evident when they replace saturated or trans fats in the diet, not simply when they are added. The evidence is strongest for omega-3 fatty acids, while the role of omega-6 fatty acids is more nuanced and continues to be studied. Overall, the use of polyunsaturated fats to support arterial health is well-validated by scientific research.
