Winter squash is a rich source of several nutrients beneficial for eye health, most notably provitamin A carotenoids such as beta-carotene. These compounds are converted in the body to vitamin A, which is essential for maintaining normal vision and preventing conditions such as night blindness and xerophthalmia. Scientific studies have shown that diets high in carotenoid-rich foods can support overall eye health and may reduce the risk of age-related macular degeneration (AMD) and cataracts. In addition to beta-carotene, winter squash provides vitamin C and lutein, both of which are antioxidants that help protect ocular tissues from oxidative stress. However, while the presence of these nutrients in winter squash is well established, most clinical evidence is based on dietary patterns or supplementation rather than direct studies of winter squash consumption. Therefore, while the biological rationale is strong and supported by some epidemiological data relating carotenoid intake to eye health, there is limited direct clinical research specifically on winter squash.
