Beet (Beta vulgaris), particularly in the form of beetroot, is sometimes recommended as a supportive food for fatty liver disease (hepatic steatosis). The rationale for its use is based primarily on its content of betaine, a methyl donor that plays a role in liver metabolism, as well as its antioxidant compounds such as betalains. Some animal studies and limited human research suggest that betaine supplementation can improve liver fat metabolism, reduce oxidative stress, and attenuate liver injury. For example, animal studies have shown that beetroot extract or betaine supplementation can reduce liver fat accumulation and improve markers of liver function. Small clinical trials in humans have also indicated potential benefits, although these studies are generally of low quality, short duration, or use purified betaine rather than whole beetroot.
Despite these promising findings, robust clinical evidence in humans is lacking, especially using whole beetroot or beetroot juice. Most major liver disease guidelines do not recommend beet or beet-derived products as a primary intervention for fatty liver disease. The evidence is therefore rated as low (2/5): there is a plausible mechanism and some supportive data, but larger, well-controlled clinical trials are needed to confirm efficacy and safety. Beet remains a nutritious food and can be part of a healthy diet, but it should not be relied upon as a sole or primary treatment for fatty liver disease.
