Safflower (Carthamus tinctorius) has been investigated for its potential benefits in supporting or treating non-alcoholic fatty liver disease (NAFLD) and related hepatic conditions. The scientific evidence for its use is limited but exists, primarily stemming from preclinical studies and a small number of human trials. Safflower oil is rich in polyunsaturated fatty acids, particularly linoleic acid, which have been studied for their lipid-lowering and anti-inflammatory effects. Animal studies suggest that safflower oil may help reduce hepatic fat accumulation and improve liver function markers. For example, some rodent models of NAFLD have shown reductions in liver fat content and improvements in serum markers such as ALT and AST following safflower oil supplementation.
Human evidence is much more limited. A few small clinical studies have investigated the effects of safflower oil supplementation on metabolic parameters associated with fatty liver disease, such as insulin sensitivity and lipid profiles, with mixed results. There is no strong clinical consensus, and major guidelines do not recommend safflower specifically for NAFLD. The available evidence is not robust enough to support safflower as a primary treatment, but it suggests some potential adjunctive benefit. Therefore, while there is some scientific basis for its investigation in fatty liver disease, the strength of evidence is low, meriting a rating of 2 out of 5.
