Seaweed is used to support or treat goiter primarily due to its high natural iodine content. Goiter, an enlargement of the thyroid gland, is most commonly caused by iodine deficiency. Iodine is an essential micronutrient required for the synthesis of thyroid hormones. Historically, populations with low dietary iodine intake have had higher rates of goiter, and the introduction of iodine-rich foods or iodized salt has dramatically reduced its prevalence. Seaweed, particularly varieties like kelp and nori, contains high levels of iodine. Scientific reviews and clinical guidelines recognize iodine supplementation as an effective strategy for preventing and treating iodine-deficiency goiter (Zimmermann MB, Endocr Rev. 2009).
