Ovotransferrin is a glycoprotein found in egg white and is a member of the transferrin family, known for its iron-binding properties. Ovotransferrin exerts antibacterial effects by sequestering free iron in biological fluids, thereby depriving bacteria of an essential nutrient required for their growth and replication. Several studies have demonstrated that ovotransferrin can inhibit the growth of various pathogenic bacteria, such as Escherichia coli and Salmonella species, in laboratory settings.
Additionally, ovotransferrin-derived peptides have shown direct antimicrobial activity by disrupting bacterial membranes. Some animal studies suggest immunomodulatory effects, including the stimulation of immune cell activity, which could further support infection control.
