The primary component of interest is type II collagen, which is abundant in chicken sternum cartilage. Multiple clinical studies have investigated the effects of undenatured type II collagen derived from chicken on joint health, particularly in individuals with osteoarthritis and rheumatoid arthritis. Results indicate that supplementation with undenatured type II collagen can reduce joint pain, improve mobility, and decrease markers of inflammation in some populations. The mechanism is thought to involve oral tolerance, which may modulate immune responses that contribute to joint inflammation.
Additionally, chicken is a source of amino acids such as glycine and proline, which are building blocks for the body's own collagen synthesis. Consuming chicken broth or bone broth, which contains gelatin and collagen, is a traditional practice, but emerging studies provide some support for its potential to aid in cartilage repair and joint function.
