Alliin is a sulfur-containing compound found in garlic (Allium sativum), and it serves as a precursor to allicin, the more reactive organosulfur compound produced when garlic is crushed or chopped. Garlic, and by extension alliin, has been traditionally used for cardiovascular health, including lipid-lowering effects. Scientific research, including meta-analyses and clinical trials, has explored the impact of garlic and its constituents on blood lipids, including triglycerides.

Some clinical trials indicate that garlic supplementation may lead to modest reductions in triglyceride levels, but the results are inconsistent. Most studies use garlic powder or extracts, which contain varying amounts of alliin. A 2018 meta-analysis in the journal Nutrition Research Reviews noted small but statistically significant reductions in triglycerides with garlic supplementation, although the effect was less pronounced than for total cholesterol or LDL cholesterol. The mechanism is thought to involve inhibition of hepatic lipid synthesis and increased breakdown of triglycerides, though it is unclear whether alliin itself or its metabolite allicin is primarily responsible.

It is important to note that most studies do not isolate alliin as the sole active component, so direct evidence for alliin alone is limited. The overall evidence for garlic's triglyceride-lowering effect is moderate at best, with a small effect size and considerable variability between studies. Thus, the evidence for alliin specifically as a triglyceride-lowering agent is rated as weak to modest.
