Hydroxycinnamic acids are a group of polyphenolic compounds found in various plant-based foods, such as coffee, whole grains, fruits, and vegetables. The main compounds in this group include caffeic acid, ferulic acid, and p-coumaric acid. There is some scientific evidence suggesting that hydroxycinnamic acids may influence lipid metabolism, including triglyceride levels. Several animal and in vitro studies indicate that these compounds can exert lipid-lowering effects by modulating enzymes involved in lipid synthesis and breakdown, and by exerting antioxidant activity that may protect against lipid peroxidation.

Some small human studies and clinical trials have investigated foods rich in hydroxycinnamic acids (such as coffee or whole grains) and noted modest reductions in triglyceride levels, but results are inconsistent and often confounded by other dietary factors. For example, a meta-analysis of coffee consumption indicates potential benefits for lipid profiles, but isolating the effect of hydroxycinnamic acids specifically is challenging.
